Snow Peas With Bamboo Shoots And Mushrooms Recipe
Ingredients
6 to 8 dried Chinese mushrooms
1/2 lb fresh snow peas
3 Tbs peanut or vegetable oil
1/2 cup winter bamboo shoots, sliced
1/2 tsp salt
1 Tbs light soy sauce
1 tsp sugar
Directions
Soak mushrooms in hot water for about 20 minutes.
Cut off and discard stems.
Cut each into 2 to 4 sections.
Trim the ends and strings from the snow peas.
Rinse them with cold water, then parboil.
Heat 2 Tbs oil in wok.
Add salt first, then the snow peas, stirring constantly for about 1/2 minute.
Remove and set aside.
Heat another 1 Tbs oil in wok.
Stir in bamboo shoot slices and mushrooms, then add soy sauce and sugar.
Stir and cook for 1 minute.
Mix in the cooked snow peas.
Cut off and discard stems.
