 Olive oil2 Tablespoon
 Balsamic vinegar2 Tablespoon
 Dijon Mustard1 Tablespoon
 Whole red, yellow, green or purple pepper - 9 ounces OR Sliced (ready-cut) - 8 ounces (1 1/4 cups)
 Snow peas8 Ounce, blanched

Directions

GETTING READY
1) Wash the whole peppers.
2) Using slicing blade of food processor, cut the peppers into strips.
3) Drain excess moisture.
4) wash the raw snow peas, trim them and cut them into half.

MAKING
5) In salad bowl, beat oil with vinegar and mustard.
6) Add the snow peas and peppers into dressing.
7) Mix well to coat.

SERVING
8) Serve the salad with meats and vegetable dishes.
