Snitz And Knepp Recipe
Ingredients

| Apples | 2 Cup (16 tbs), dried | |
| Brown sugar | 2 Tablespoon | |
| Ham | 1 1/2 Pound | |
| Knepp | ||
| All purpose flour | 2 Cup (16 tbs) | |
| Baking powder | 3 1/2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Egg | 1 , beaten | |
| Butter | 2 Tablespoon, melted | |
| Milk | 1/2 Cup (16 tbs) | |
Directions
To make snitz: Wash dried apples, place in a bowl, cover with water, and soak overnight.
Next day, in a large kettle, cover ham with cold water.
Bring water to a boil; then cook slowly over low heat for 3 hours.
Add apples and the water in which they soaked.
Add brown sugar and cook for 1 more hour.
To make knepp: Sift together flour, baking powder, and salt.
Stir in egg and melted butter.
Add enough milk to make a batter stiff enough to drop from a spoon.
Drop batter by spoonfuls into boiling ham and apples.
Cover pan tightly and cook dumplings for 10 minutes without lifting the cover.
If dumplings are not done, cover and cook for 2 more minutes.
Serve immediately.
