Use 2 pounds fresh or frozen red snapper fillets or other fish fillets.
Thaw frozen fillets.
Cut into 6 portions.
Place in shallow dish.
Combine 1/2 cup salad oil, 1/4 cup lime juice, and 1 teaspoon salt.
Pour mixture over fish.
Marinate at room temperature 1 hour, turning once.
Drain, reserving the oil-lime juice marinade.
Place fillets on well-greased rack of broiler pan.
Broil about 4 inches from heat till fish flakes easily when tested with a fork, 10 to 15 minutes.
Brush occasionally with reserved marinade.
Remove to warm serving platter.
Sprinkle 1/4 cup toasted coconut over fillets.
Serve with lime wedges.
