Ingredients
1 bay leaf
2 lemon slices
4 red snapper fillets (5 ounces each)
Forthe sauce:
1/3 cup water
1 1/2 tablespoons cornstarch
1/3 cup orange juice
2 teaspoons reduced-sodium soy sauce
3/4 teaspoon ground cumin
1 green onion, thinly sliced (2 tablespoons)
Directions
1 ln a 12-inch skillet, bring 2 inches of water to a simmer with the bay leaf and lemon slices.
Add the fillets, cover, and barely simmer for 4 to 6 minutes or until the fish flakes easily when tested with a fork.
