Smothered Turkey Recipe
Ingredients
| Garlic | 7 Clove (5gm), peeled | |
| Black pepper | 3/4 Teaspoon | |
| Oregano | 5 Teaspoon | |
| Salt | 10 Teaspoon | |
| Vinegar | 2 Tablespoon | |
| Turkey | 1 Pound, cut into pieces | |
| Prunes | 12 , pitted | |
| Onions | 10 Small, peeled | |
| Bay leaves | 4 | |
| Green olives | 12 , pitted | |
| Capers | 2 Tablespoon | |
| 1 tablespoon liquid from capers water | ||
| White wine | 1/2 Cup (16 tbs) | |
| Sugar | 3/4 Cup (16 tbs) | |
Directions
Grind garlic, pepper, oregano, and salt together; add vinegar rub turkey pieces with mixture.
Place in deep kettle; add prunes, onions, bay leaves, olives, capers, and caper liquid to turkey; cover.
Chill for 8 hours; add water to half; cover.
Bring to a boil.
Cover.
Reduce heat and simmer for 2 hours; add wine and sugar.
Cover.
Simmer for 1 hour.
Place in deep kettle; add prunes, onions, bay leaves, olives, capers, and caper liquid to turkey; cover.
Chill for 8 hours; add water to half; cover.
Bring to a boil.
Cover.
