Smothered Pigeons Recipe

Smothered pigeons is a gourmet recipe prepared with pigeon meat along with apples, mushrooms and madiera wine. Elegant and flavorful, the smothered pigeons is cooked along with onions in a skillet. Ingredients

 
3 tablespoons butter
 
2 pigeons (about 2 pounds)
 
3 onions, sliced
 
1 cup meat stock or broth
 
2 tart apples, cored and sliced
 
1/4 cup sliced mushrooms
 
Juice of 1/2 lemon
 
1/3 cup Madeira
 
1 tablespoon butter or margarine (at room temperature)
 
1 tablespoon Browned Flour
 
1 cup dairy sour cream

Directions

Melt butter in a large skillet.
Saute pigeons in butter 15 minutes.
Remove pigeons.
Fry onions in the butter left in skillet until tender.
Add stock, sliced apples, mushrooms, and lemon juice.
Mix well and bring to boiling.
Add wine.
Mix butter with flour until smooth.
Stir into liquid in skillet.
Cook and stir until mixture is thickened.
Dip pigeons in sour cream; return to skillet.
Cook, covered, until tender.
