Smothered Okra Recipe
Ingredients
| Onion | 1 Large, chopped | |
| Green pepper | 1/2 Cup (16 tbs), chopped | |
| Butter/Margarine | 2 Tablespoon | |
| 2 cups sliced okra or one 10 ounce package frozen cut okra, thawed | ||
| 2 medium tomatoes, peeled, seeded, and chopped | ||
| Salt | 1/4 Teaspoon | |
| Ground red pepper | 1/4 Teaspoon | |
| Ground black pepper | 1/8 Teaspoon | |
Directions
In a 10 inch skillet cook onion and green pepper in butter or margarine about 5 minutes or till tender.
Stir in okra, tomatoes, salt, red pepper, and black pepper.
Bring to boiling.
Reduce heat.
Cover and simmer for 30 to 35 minutes for fresh okra or about 15 minutes for frozen okra or till okra is tender.
