Ingredients:
 
2 lbs boneless chicken thighs
 
2 cups flour
 
2 tbsp Cajun seasoning
 
For the sauce:
 
½ cup celery (chopped finely)
 
1 ¼ cup chopped onion
 
3 tbsp butter
 
3 tbsp flour
 
4 cups chicken stock
 
Salt
 
½ tsp pepper
 
¼ cup dry sherry
 
Worchestershire sauce

Directions

Take a bowl and add in the flour, half of the cajun seasoning, salt and pepper. Mix well. Cut the chicken into manageable pieces and roll it in the flour mixture. Toss till the chicken is well-coated. Shake off the excess flour. Take a skillet and add vegetable oil to fry. Add in the chicken pieces. Turn over and cook till both sides are golden brown. Drain and keep aside.
For the sauce:
Take a pan and add the butter. When the butter melts, add in the chopped celery and onions. Sauté for 3-5 minutes till transparent. Add ¼ cup dry sherry. Stir for 30-40 seconds. Add in the flour, a tsp of salt, 1 tbsp of Cajun seasoning and combine. Add chicken stock little by little and keep stirring till you have a smooth sauce. Add a tsp to a tbsp of worchestershire sauce (as per taste). Reduce heat to low and add the fried chicken pieces. Simmer for 30-40 minutes. Serve.
