1 duck (5 to 6 pounds), cut up
 
1 clove garlic, crushed (optional)
 
Salt and pepper
 
3 tablespoons butter or bacon drippings
 
1 cup chicken or beef bouillon
 
2 tablespoons water
 
2 teaspoons cornstarch
 
1/3 cup capers
 
2 teaspoons brown or caramelized sugar
 
1 tablespoon lemon juice

Directions

Rub duck with garlic.
Sprinkle cavity with salt and pepper to taste.
Let stand 1 to 2 hours.
Melt butter in a heavy skillet or dutch oven.
Add duck and brown quickly on all sides.
Drain off fat, if desired.
Add bouillon.
Cover.

Blend water into cornstarch.
Stir into hot liquid in Dutch oven.

Reduce heat.

Stir just until sauce is thickened.
