Smothered Snap Beans Recipe

Ingredients
| 2 Ibs. fresh, or 2 cans, snap beans | ||
| Salt | 1/2 Teaspoon | |
| 1 1/2 Ibs. slab bacon or cured ham | ||
| 1 tablespoon bacon grease, drippings, or lard | ||
| 1 large onion, chopped fine | ||
Directions
Prepare fresh beans by snapping off the ends and cutting up the beans.
Put the bacon or ham and the onion in a pot with 2 cups water, let boil 15 minutes, add the beans, boil 15 minutes longer, then add 1/2 teaspoon salt and 1 tablespoon bacon grease, drippings, or lard.
Cook young tender beans 30 minutes longer, older ones 40 minutes.
Canned beans may be done in 10 minutes.
