Smothered Pork With Peppers Recipe

Ingredients
6 pork chops, trimmed of fat
2 tablespoons water
1 tablespoon sunflower oil
2 medium-size onions, thinly sliced
1 sweet red pepper, diced
1 green pepper, diced
2 cloves garlic, minced
4 cups sliced mushrooms
2 cups chopped, cooked plum tomatoes with juice
1 teaspoon marjoram
1/2 teaspoon oregano
1/4 teaspoon thyme
Directions
Place the pork chops in a large skillet with the water and cook over medium heat until the water evaporates and the pork chops begin to brown.
Remove the chops to a large, shallow baking dish and arrange in one layer.
Heat the oil in a large skillet and when it is warm, add the onions, the red peppers, and the green peppers.
Cook until the onions are translucent, then add the garlic.
Stir over medium heat for 2 to 3 minutes.
Add the mushrooms and cook until they release their liquid and the liquid has evaporated.
In a blender, combine the tomatoes with the marjoram, oregano, and thyme on medium speed until the mixture is smooth.
Combine with the onion mixture in the skillet.
Pour the tomato and onion mixture over the pork chops in the baking dish.
Cover with foil and bake at 325° for 1 hour.
Remove the foil and bake an additional 15 minutes.
