2 Tablespoons olive oil
 
1 Teaspoon crushed red pepper
 
1 Red bell pepper, chopped
 
1 Medium onion, chopped
 
1 Tablespoon garlic, minced fine
 
1 Can (28 oz.) fire roasted diced tomatoes, (not drained)
 
3 Cups pre-cooked chicken (Rotisserie Chicken from the deli is best)
 
1 Can (16 oz.) cannelloni beans, (not drained)
 
1 Can (15 oz.) black beans (rinsed and drained)
 
1 Bottle of your favorite beer
 
1/4 Teaspoon (dash) liquid smoke
 
1 Envelope white chicken chili seasoning mix (1.25 oz.)
 
OPTIONAL TOPPINGS
 
shredded cheddar cheese,
 
chopped fresh cilantro
 
sour cream
 
lime wedges
 
baby corn
 
sliced black olives
 
chopped red onion
 
tortilla chips.

Directions

Heat a large Dutch oven over medium-high heat for two minutes. Add the oil and swirl to coat. Add the next four ingredients and Sauté for 8 minutes. Stir in the tomatoes and the next 6 ingredients. Simmer for 10 minutes, stirring occasionally until thick. Serve with desired toppings.
