Smoky Chicken Roasts Recipe
Ingredients
2 2 to 2 1/2 pound ready to cook broiler fryer chickens
1/2 cup cooking oil
1/4 cup lemon juice
Directions
Salt chicken cavities; truss.
Insert spit rod through centers of birds.
Adjust holding forks; test balance.
Soak hickory chips in water.
Place medium coals on both sides of drip pan.
Combine oil and lemon juice; brush on birds.
Attach spit so birds are over drip pan.
Turn on motor.
Roast over medium coals for 1 1/2 hours, brushing frequently with lemon mixture and sprinkling coals with hickory chips every 15 minutes
