Smoked Trout Mousse Recipe

Ingredients
2 8 ounce smoked trout
1 1/2 cups heavy cream
2 tablespoons chopped scallions
1/2 cup plain yogurt
White pepper to taste
Additional chopped fresh dill for garnish
1/8 teaspoon nutmeg
2 teaspoons chopped fresh dill
Melba toast
1 package unflavored gelatin
Directions
Skin and bone trout and puree in food processor with scallions, pepper, nutmeg and dill.
Soften gelatin in cream; then heat gently to dissolve completely.
Add cream and yogurt to trout mixture and process to combine and make smooth.
Pour into decorative 3 cup mold or ring mold.
Refrigerate overnight.
To unmold, run knife around edge.
Fill sink with hot water.
Hold mold in sink a few seconds, shaking until the mousse has pulled away from sides of mold.
Unmold on serving dish and surround with melba toast.
NOTE TO COOK: Carry to party in mold.
Carry melba toasts in plastic bag, chopped dill in another plastic bag.
