Ingredients
4 oz. smoked salmon pieces
4 tablespoons single cream
1 teaspoon lemon juice
Salt
Freshly ground black pepper
Freshly grated nutmeg
3 tablespoons liquid aspic
1 egg white
5 fl. oz. double cream
Directions
Chop the smoked salmon coarsely.
Put it into a blender, or through a food mill, together with the single [light] cream, lemon juice, a little salt, freshly ground black pepper and nutmeg.
Blend it to a smooth puree then beat in 3 tablespoons of liquid aspic.
Whisk the double [heavy] cream until it is soft but firm, then fold it into the salmon mixture.
Whisk the egg white until stiff but not dry and add it to the mixture.
Taste and season again if necessary.
Pour the mousse into a small deep serving dish or individual ramekins and chill until set.
Serve with brown bread and butter or slices of toast.
