Ingredients

 
1 cup olive oil
 
1 teaspoon dried oregano leaves
 
1/2 cup dry white wine
 
1/2 pound sun dried tomatoes
 
24 peppercorns
 
1 pound smoked mozzarella cheese, cut in 1/2 inch cubes
 
1 teaspoon dried basil

Directions

Bring the oil, wine, peppercorns, basil and oregano to boil in a non aluminum pot.
Stir in tomatoes and simmer for 10 minutes, until tomatoes soften.
Remove from heat; cover and let mixture sit for an hour.
Pour off all but 1/2 cup of the liquid and combine with tomatoes and mozzarella; stir gently and serve at room temperature.
This mixture is better if made a few days in advance.
Serve with toothpicks.
NOTE TO COOK: Carry to party in tightly covered plastic container.
Arrange on serving dish with toothpicks at party.
Sun dried tomatoes and smoked mozzarella are found in Italian grocery stores and gourmet food shops.
Smoked mozzarella bears no relationship to that bouncy stuff they sell as mozzarella in the supermarket.
