Smoked Mackerel Salad Recipe
Ingredients
1 cup mayonnaise
2 teaspoon curry powder
4 teaspoon wine vinegar
1 cup boiled long grain rice
2 lb. smoked mackerel fillets, cut into thin strips
3 medium tomatoes, skinned and chopped
3 branches celery, diced
salt and pepper
2 hard-boiled eggs, sliced
small bunch chopped watercress
4 sliced radishes
Directions
1 Mayonnaise is a traditional accompaniment to cold, poached salmon and can also be served with fish salads vinegar.
2 Stir in the rice, mackerel fillets, tomatoes and celery.
3 Blend well and season with salt and pepper.
4 Pile the mixture onto a flat serving platter and decorate with the hard-boiled eggs, watercress and radishes.
