Smoked Fish Potato Salad Recipe

Ingredients

 
1/2 cup chopped onion
 
2 tablespoons butter or margarine
 
1 10 1/2-ounce can condensed cream of celery soup
 
1/3 cup milk
 
2 tablespoons sweet pickle relish
 
2 tablespoons vinegar
 
6 medium potatoes peeled, cooked and cubed
 
1 pound smoked whiting or other smoked fish skinned boned and flaked (1 1/2 cups)
 
1 hard-cooked egg, cut in wedges

Directions

In saucepan cook onion in butter till just tender.
Blend in condensed soup, milk, pickle relish, and vinegar.
Gently stir in potatoes and whiting.
Heat through.
Trim with egg wedges.
Sprinkle with paprika and garnish with parsley, if desired.
