Ingredients

 
1 cup rice
 
1 1/4 cups water
 
2 teaspoons soy sauce
 
2 tablespoons vinegar
 
1 teaspoon sugar
 
1/2 teaspoon salt
 
16 thin slices smoked salmon OR 32 anchovies OR a mixture of both

Directions

Wash the.rice and combine with the water.
Cover and bring to a boil.
Cook over low heat 20 minutes, or until rice is tender and dry.
With a fork, stir in the soy sauce, vinegar, sugar, and salt.
Pat rice onto a board or plate.
Cool completely.
Shape teaspoons of the rice into balls or oblong patties.
Cut salmon in half lengthwise and wrap salmon or anchovies around the rice.
