Smoked Cod French Style Recipe
Ingredients
| Cod fillets | 1 Pound, smoked | |
| Garlic | 2 Clove (5gm), crushed | |
| Double cream | 8 Tablespoon | |
| Olive oil | 3/4 Cup (16 tbs) | |
| Juice and grated peel of 1 lemon | ||
| black pepper | 1 | |
| Toast fried in olive oil or butter | ||
Directions
Soak the cod fillets in cold water for at least 12 hours, changing the water often.
Drain and place in a saucepan, cover with cold water and bring to the boil.
Remove from the heat, cover and let cod sit in the water for at least 7 minutes.
Strain the fish, remove bones, skin and flake the fish.
Place the fish in an electric blender with crushed garlic, 3 tablespoons cream and 4 tablespoons olive oil and blend.
Add the rest of the cream and olive oil alternately from time to time until the oil and cream are completely absorbed.
Put the mixture into a bowl over some hot but not boiling water, stir in lemon juice and peel and season to taste.
Heat through and serve in a mound on a hot plate surrounded by fried toast squares.
This may also be served cold,
