Ingredients

 2 hard cooked eggs, diced
 Diced pimento or pickle relish
 Mayonnaise1/4 Cup (16 tbs)
 Lemon juice1 Tablespoon
 1 cup thick unseasoned white sauce 250 mL
 Skim milk1 Cup (16 tbs)
 Cod fillets1 1/2 Pound, smoked
 Parmesan cheese2 Tablespoon, grated

Directions

Stir the first four ingredients into the white sauce and keep hot in a double boiler.
Heat the milk in a large skillet and add cod cut into 6 serving pieces.
Cover and simmer just until fish flakes easily, about 8 minutes.
If using frozen fillets, cook for 12 minutes.
Drain 3/4 cup (175 mL) of fish liquid into the sauce and stir lightly.
Arrange fish in a shallow bake pan and pour sauce evenly over the top.
Sprinkle with cheese and broil until lightly browned.
