Smoked Cod Deluxe Recipe
Ingredients
| 2 hard cooked eggs, diced | ||
| Diced pimento or pickle relish | ||
| Mayonnaise | 1/4 Cup (16 tbs) | |
| Lemon juice | 1 Tablespoon | |
| 1 cup thick unseasoned white sauce 250 mL | ||
| Skim milk | 1 Cup (16 tbs) | |
| Cod fillets | 1 1/2 Pound, smoked | |
| Parmesan cheese | 2 Tablespoon, grated | |
Directions
Stir the first four ingredients into the white sauce and keep hot in a double boiler.
Heat the milk in a large skillet and add cod cut into 6 serving pieces.
Cover and simmer just until fish flakes easily, about 8 minutes.
If using frozen fillets, cook for 12 minutes.
Drain 3/4 cup (175 mL) of fish liquid into the sauce and stir lightly.
Arrange fish in a shallow bake pan and pour sauce evenly over the top.
Sprinkle with cheese and broil until lightly browned.
