Smoked Ulua Recipe
Ingredients
| Ulua - 1, 6-8 lbs. | ||
| Rice wine | 1 Tablespoon | |
| Salt | 2 Teaspoon | |
| Soy sauce | 4 Tablespoon | |
| Sugar | 1 Tablespoon | |
| Green onion - 4 stalks, smashed | ||
| Ginger root slice | 4 | |
| Tea leaves | 1/2 Cup (16 tbs) | |
| Sugar | 2 Tablespoon | |
| Mayonnaise | 1/2 Cup (16 tbs) | |
Directions
GETTING READY
1) Preheat oven to 450°F.
2) Wash fish and cut into 4 sections.
3) Combine fish with wine, salt, soy sauce, sugar, green onion and ginger root.
4) Allow it to marinate for one hour.
MAKING
5) On a grill or roasting rack, lightly greased with oil, place the fish.
6) Arrange the fish on grill in oven.
7) Place the tea leaves and sugar in a pie pan or heat-resistant plate and keep it directly beneath grill.
8) Bake for 25 minutes in preheated oven.
SERVING
9) To a serving plate, remove fish, brushing outside lightly with sesame oil.
10) Divide mayonnaise onto serving plate and serve.
