1. In a large pot pour the smoked turkey fat and the bacon sauté for few minute and then add the onions, celery, salt mix, pepper & garlic sauté the entire ingredients well.
2. Then add the ham, sausages, stock, hot sauce and the turkey lower the heat.
3. In a small bowl you can combine all the ingredients for the seasoning and add that to the pot along with the scallions.
4. Cook the turkey gumbo for an hour on low heat. Once done remove the turkey from the gumbo pot and then remove the meat from the bone and add just the meat to the gumbo pot.
5. For making the gumbo-laya: In another pot remove some off the gumbo mixture add the stock and rice, cook for 10 minute and then cover the pot turn off the heat and simmer for 10 more minute.

6. Serve the delicious Smoked Turkey Gumbo- Laya hot.
