 Pork loin4 Pound
 Chili powder2 Tablespoon
 Kosher salt3 Tablespoon
 Ground pepper1 Tablespoon
 Cayenne pepper1 Teaspoon
 Ground coriander1 Tablespoon
 Brown sugar1 Tablespoon
 Oregano powder1 Tablespoon
 Spanish paprika4 Tablespoon
 Ground white pepper1 Tablespoon
 Liquid smoke1 Teaspoon
 Water1⁄2 Cup (8 tbs)

Things You Will Need

Ham cloth previously soaked in water mixed with liquid smoke.

Directions

GETTING READY:
1)In a bowl mix all the dry ingredients together and set aside.
2)Trim the pork loin and liberally apply the rub with rubber gloves on and refrigerate for 48hours to cure by sealing it in cling wrap.

MAKING:
3)Start the barbecue smoker with previously soaked hickory wood chips till the internal temperature is 140 degrees.
4)On a baking tray un- wrap the pork loin and place in a ham bag presoaked in water mixed with liquid smoke and tie.
5)Hang the ham in the smoker for 3 ½ hours
6)After cooking place it in the refrigerator for a couple of days or enjoy hot.

SERVING:
7)Slice thinly and serve or as you like it.

TIPS:
The seasonings can be varied in proportion according to taste.
