Directions

In a wok, saute the sausages for a while. Remove and keep aside.
Then in the same wok, add the onion and peppers. Stir for a while and sprinke salt and pepper. Add the garlic and return the sausages. Pour a can of Rotel and mix well. Season with the oregano and thyme. Stir and cook further for a few minutes.

Stuff this sausage, peppers, and onions into a large bread roll or spoon it over pasta, polenta or rice and you have yourself a hearty meal. Eat too much of this and you are sure to be in a food coma for the rest of the day. You will probably have to eat soup or steamed broccoli for dinner because after that lunch, you just don't need much for dinner.
