Smoked Salmon with Cucumber Dip Recipe
Ingredients
| Cucumbers -€“ 2, medium, washed, peeled, thinly sliced | ||
| Dairy sour cream | 1/2 Cup (16 tbs) | |
| Cider vinegar | 3 Tablespoon | |
| Chives | 1 Tablespoon, minced | |
| Fresh dill -€“ ½ tsp, crumbled | ||
| Salt | 3/4 Teaspoon | |
| Pepper | 1/8 Teaspoon | |
| Smoked salmon -€“ ¼ pound, sliced into thin pieces | ||
| Pumpernickel bread -€“ 6 slices | ||
| Butter -€“ as required | ||
Directions
MAKING
1. Mix sliced cucumbers with sour cream, dill, chives, and vinegar and season with salt and pepper.
2. Allow the mixture to chill, covered, for 2 to 3 hours.
3. Spread butter on each of the bread slices and top with 1 salmon slice. Spread the chilled cucumber mixture above salmon.
SERVING
4. Serve Smoked Salmon with Cucumber Dip immediately garnished with a sprig of fresh mint.
