 Water1 Quart (Brine:)
 Canning salt1/2 Cup (16 tbs) (Brine:)
 Brown sugar1/2 Cup (16 tbs) (Brine:)
 1/2 tsp. liquid garlic
 1/2 tsp. liquid onion

Directions

Mix brine thoroughly in a non-metal container.
Soak fish for at least 12 hr., turning several times.
Then dry fish in smoker 6-8 hr. using favorite wood such as alder or cherry chips.
