1.Trim off the excess fat, and lightly coat the meat with dry rub.
2.Preheat smoker to 225-275 degree F.
3.Place the pork on smoker, cover and smoke for about 10-12 hours or until the internal temperature reaches 195 degree F.
4.Remove the meat from flame and wrap it with foil for about 45-60 minutes for the delicate flavor and juices to permeate the meat.
5. Pull pork and serve hot with sauce!
