Smoked Pork Chops With Sweet Potatoes Recipe
Ingredients
| 4 medium-size sweet potatoes (about 2 lbs. total) | ||
| Butter/Margarine | 4 Tablespoon, melted | |
| Firmly packed brown sugar | 3/4 Cup (16 tbs) | |
| Ground cinnamon | 1/4 Teaspoon | |
| 4 smoked pork chops, cut 3/4 inch thick | ||
| Pineapple | 1 Can (10oz), sliced | |
| Parsley sprigs | ||
Directions
Prepare and boil sweet potatoes
Drain, peel, and cut in half lengthwise.
Pour 2 tablespoons of the butter into a 9-inch square baking dish and stir in 1/4 cup of the sugar.
Arrange potatoes in dish in an even layer and sprinkle with cinnamon and remaining 1/2 cup sugar.
Arrange chops over potatoes.
Drain pineapple, reserving liquid.
Cut pineapple slices in half and place over chops.
Pour reserved liquid and remaining 2 tablespoons butter over all.
Cover and bake in a 350° oven for 10 minutes.
Uncover, baste with pan juices, and continue baking for 20 to 30 more minutes or until fruit and chops are lightly browned; baste several times.
Garnish with parsley.
