 Whipping cream1 Cup (16 tbs)
 Sugar1/2 Teaspoon
 Horseradish 4 Tablespoon, grated
 White vinegar2 Tablespoon
 Salt To Taste
 Pepper white1
 1 teaspoon chopped chives, dill or parsley or a combination
 1 lb. smoked trout, sturgeon, salmon or other smoked fish, thinly sliced
 Pumpernickel or other dark bread, thinly sliced
 Unsalted butter1 To taste

Directions

In a medium bowl, whip cream and sugar until soft peaks form.
Fold in horseradish and vinegar.
Add salt and white pepper to taste.
Spoon into a small serving bowl.
Sprinkle with chives, dill, parsley or combination.
Arrange sliced fish and bread on a platter.
Let guests butter bread and top with smoked fish.
