Smoked Fish Pate Recipe
Ingredients
| 1 small tart apple, cored and cut up | ||
| Horseradish | 1 1/2 Tablespoon | |
| Lemon juice | 1 Teaspoon | |
| Green onions | 3 , minced | |
| 1 pound smoked fish, skinned and boned | ||
| 1/2 teaspoon freshly ground white pepper | ||
| Pinch garlic potfder | ||
| Salt | 1/2 Teaspoon | |
| Butter (at room temperature), sour cream, or mayonnaise, as needed | ||
| Zest of 1 orange | ||
Directions
MAKING
1. Process horseradish, apple and lemon juice in a food processor with steel blade till appleās texture is medium to fine.
2. Transfer to a bowl, add green onions and mix well.
3. Process fish, garlic, salt and pepper in a food processor to blend thoroughly.
4. Transfer fish mixture to a serving bowl and fold orange zest and apple mixture into fish mixture.
SERVING
5. Serve immediately.
TIPS
1. The fish mixture can be processed by running twice through a food grinder.
2. Add sour cream, mayonnaise or butter at room temperature to moisten dry fish mixture.
