1 to 1 1/2 pounds kippered salmon or kippered cod
 
2 tablespoons butter or margarine
 
2 tablespoons flour
 
1 cup half-and-half (light cream)
 
1 tablespoon chopped capers
 
4 prepared patty shells or 4 slices toast

Directions

Steam the kippered salmon or kippered cod in any kind of steamer, improvised if necessary.
(Set fish on rack above boiling water, cover, and steam just until heated through.
A 1-pound piece of fish takes 10 to 15 minutes.) Using two forks, flake into bite-sized pieces while hot, removing the bones.
Meanwhile, melt the butter or margarine in a pan; stir in the flour and cook until bubbly.
Remove from heat while you slowly stir in the light cream.
Add the chopped capers and cook, stirring, until the sauce is thickened.
Stir in the hot fish.
