Ingredients

 
2 lb chicken
 
3 carrots
 
Celery
 
Lemons
 
1 onion
 
Thyme
 
Extra virgin olive oil
 
Kosher salt

Directions

First stuff the whole chicken with slices of lemon, sprinkle some salt, then stuff celery inside, chop off the excess,then stuff carrots, onions from the other hole of chicken.
Transfer the chicken to a baking bowl.
Drizzle some olive oil and spread it over chicken with a paint brush.
Sprinkle some thyme and cracked black pepper.
Cook it in a oven preheated to 275 for about 5-7 hours.
To eat cut slices with a fork and knife.
