Sllver White Cake Recipe

Ingredients
4 egg whites
1 1/2 cups sugar
2 1/4 cups cake flour
1 cup milk
1/2 cup shortening
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon vanilla extract
1/4 teaspoon almond extract
Directions
1. Preheat oven to 375°F. Grease and flour two 8-inch round cake pans.
2. In small bowl, with mixer at high speed, beat egg whites until soft peaks form. Beating at high speed, sprinkle in 1/2 cup sugar, 2 tablespoons at a time, beating until sugar dissolves and whites stand in stiff peaks. Set aside.
3. Into large bowl, measure 1 cup sugar and remaining ingredients; with mixer at low speed, beat until well mixed, constantly scraping bowl. Beat at high speed 2 minutes, occasionally scraping bowl. With mixer at low speed, beat in egg whites just until blended.
4. Pour batter into pans. Bake 25 minutes or until toothpick inserted in center of cake comes out clean. Cool in pans on racks 10 minutes. Remove from pans; cool completely on racks.
