Ingredients

 
Flour
 
1 1/2-2 pounds calf's liver, cut into finger-size strips
 
4 tablespoons butter
 
Salt and fresh pepper to taste
 
Juice and rind of 1/2 orange
 
2 tablespoons chopped chives
 
1/4 cup chicken stock

Directions

Flour the liver strips.
Melt the butter.
Saute the liver for 3-5 minutes.
Season with salt and pepper.
Remove liver strips to serving dish.
Add the orange juice and rind, chives, and chicken stock.
Reduce to half while scraping any brown bits.
Pour Over liver.
