| 1 whole chicken breast (about 1 lb.), boned and skinned | ||
| Soy sauce | 1 Tablespoon | |
| Cornstarch | 1 Teaspoon | |
| Salad oil | 3 Tablespoon | |
| Walnut halves | 1/2 Cup (16 tbs) | |
| 1 medium-size green pepper, seeded and cut into 1-inch squares | ||
| 1/2 teaspoon finely minced fresh ginger or 1/4 teaspoon ground ginger | ||
Directions
Prepare cooking sauce; set aside.
Cut chicken into thin strips; mix with soy and cornstarch and set aside.
Heat oil over medium-high heat in a wok or wide frying pan; add nuts and cook, stirring, until brown; remove with slotted spoon.
Add chicken to oil; cook, stirring, until opaque (about 16 minutes); lift out.
Add pepper and ginger; cook, stirring, until pepper is bright green.
Add chicken and cooking sauce; cook, stirring, until thick (about 1 minute); add nuts and serve.
