Slimmers Ratatouille Recipe
I can spend the rest of my lifetime living on Slimmers Ratatouille alone. This yummy Slimmers Ratatouille is my favorite and it will soon be yours too!! Just try it!
Ingredients
1/2 lb zucchini
1 lb eggplant
Salt
1 x 14 oz can tomatoes, chopped
1/2 teaspoon dried basil
Salt and pepper
1 medium sized onion, finely chopped
Grated Edam cheese to garnish
Directions
1 Cut the courgettes (zucchini) and aubergines (eggplant) into 5mm/1/4 inch slices and arrange in a colander. Sprinkle with salt. Top with a plate and a weight.
2 Allow to stand for 30 minutes. Rinse well under cold, running water and shake off excess water
3 Layer the courgette (zucchini) and aubergine (eggplant) slices in a 1.75 litre/3 pint (7 1/2 cup) casserole dish, with the tomatoes, basil, salt and pepper and onion. Finish with a layer of tomatoes.
4 Cover with plastic wrap (pierced) or a lid.
5 Microwave on full power for 20 minutes, turning three times during cooking, if necessary. Remove the lid or plastic wrap for the last 7 minutes to allow some of the liquid to evaporate.
