Ingredients

 
3 small broiler fryers
 
1 small onion, chopped
 
1/4 cup soy sauce
 
1 1/2 cups water
 
6 slices diet pack pineapple
 
2 tablespoons chopped parsley

Directions

Arrange split chickens, skin side down, in a large shallow baking pan.
Mix onion, soy sauce and water in a small bowl; pour over chicken.
Bake in moderate oven (350°) 45 minutes; turn chicken; bake, basting several times with soy mixture in pan, 45 minutes longer, or until brown and tender.
Drain pineapple slices well on paper toweling; roll edge of each in chopped parsley.
Serve with chicken.
