Ingredients
1 1/2 pounds pork
4 green peppers
4 tablespoons oil
1/4 teaspoon pepper
1/2 teaspoon salt
Marinade:
2 1/2 tablespoons soy sauce
1 tablespoon sherry
1 teaspoon sugar
1 teaspoon salt
1 tablespoon cornstarch
2 tablespoons water
Directions
Slice the pork thinly into pieces about 1 inch square.
Blend the ingredients for the marinade and coat the meat with this mixture; marinate for about 15 minutes.
Wash the peppers, discarding the seeds, and cut them into 1/2 inch squares.
Heat a pan with 2 tablespoons oil and when it is hot add the peppers and saute for 2 minutes, stirring constantly.
Remove them from the pan and set aside.
Add enough oil to the pan to make 2 tablespoons and when it is hot add the meat and saute for 1 minute.
Add the peppers and the remainder of the marinade and stir well.
When it becomes very hot and thick add the pepper and salt to taste.
Turn onto a shallow dish and serve at once.
