|Mushrooms||12 , soaked and cut into strips|

|Soy sauce||4 Tablespoon|

|Sliced water chestnuts||1⁄2 Cup (8 tbs)|
|Ginger slice||1 , finely chopped|
|Mushroom water||1⁄2 Cup (8 tbs)|
|Cornstarch||2 Tablespoon, mixed with 4 tablespoons water|

Add the onions, stir once or twice, add the mushrooms, stir, and add the celery and green peppers and cook for about 10 seconds.
Add the soy sauce, bean sprouts, water chestnuts, ginger and the mushroom water.
Stir quickly and add the thickening.
When the gravy becomes thick and smooth, turn onto a hot shallow dish and serve immediately.
