Ingredients
1/2 cup Mock Creme Fraiche
3/4 cup purled cherries
1/8 teaspoon ground cloves
4 large firm-ripe pears
3 cups water
2 tablespoons lemon juice
2 large sticks cinnamon, broken in 1 inch pieces
11/2 cups white or pink
Chablis wine
1/4 teaspoon ground cloves
Directions
Mix creme fraiche, cherries, and 1/8 teaspoon ground cloves.
Refrigerate covered 1 hour.
Cut pears in half lengthwise; remove cores.
Cut halves carefully into thin slices, keeping halves together.
Dip pear halves into a mixture of water and lemon juice; place halves close together in a medium saucepan.
Tuck cinnamon sticks around pears; pour wine over.
Sprinkle pears with 1/4 teaspoon ground cloves.
Simmer covered until pears are just tender (12 to 15 minutes).
Cool slightly.
Arrange pears in shallow dishes, fanning slices out slightly.
Serve warm, or refrigerate and serve cold.
