Ingredients

 Extra-virgin oil- 1 cup
 Basil leaves1 Cup (16 tbs)
 Garlic2 Clove (5gm)
 Vidalia or other sweet onions- 2, peeled and cut into 8 (1/2-inch) slices
 Kosher salt- a good pinch (optional)
 Sherry vinegar or red wone vinegar- 1/4 cup
 Black pepper1 To taste
 Large ripe tomatoes- 3, cut into 12 (1/2-inch) slices

Directions

GETTING READY
1. Start by preparing a charcoal, wood, or gas grill or preheat the broiler


MAKING
2. In a small saucepan, Pour the olive oil and heat it over medium-high heat, also add 3/4 cup of the basil leaves and cook for about 1 minute, till leaves turn crisp
3. Take a slotted spoon and use it to trasnfer to a paper towel-lined plate to drain and set aside at room temperature
4. Take the saucepan out from the heat, add the garlic slices and cook in hot oil for 2 minutes, till garlic turns crisp
5. Take the slotted spoon and use it to transfer the garlic to a paper towel-lined plate to drain, then set aside and let oil cool to room temperature
6. In a blender, transfer the garlic mixture, and also add the remaining 1/4 cup of basil leaves, now switch on the blender and puree till mixture becomes smooth, later set it aside
7. Take the onion slices and rub with the basil-flavored oil.
8. On a grill, place the onions and scorch for 4 minutes, now turn the onions over and cook for 3 minutes, till onions turn tender, once cooked properly take out the onions from the grill and allow to cool to room temperature
9. On a plate, place 2 slices of onion alongwith 3 slices of tomato on each plate, make sure you place it alternately. place few slices of garlic between the vegetables and sprinkle the tomatoes with a pinch of salt, Spoon vinegar and basil-flavored oil 1 tablespoon each over the tomatoes and the onions and season to taste with pepper, and finally top the vegetables with the fried basil

SERVING
10. Serve immediately with a sauce of your choice and with bread toasted or garlic bread
