1 pound flank steak
1/2 tsp chili powder
1/2 tsp salt
116 oz polenta cut into small pieces
1/2 c corn
1 bell pepper, choped
1 red onion, chopped
2 tbsp fresh cilantro chopped
1 jalapeno pepper
Directions
Heat a griddle. Spary non stick spray.
Sprinkle salt and chili powder on flank steak on both sides.
Cook the steak until the thermometer inserted measures 145 F.
When the steak is done plate it and let it stand.
Spread non stick spray on broiler and preheat it.
Put polenta pieces on the grill and cook them until done on both sides.
Spray some non stick spray in a pan and add red bell pepper, corn, onion and jalapeno.
Sprinkle some cilantro.
To serve, place three polentas and place steak over it.
