Sliced Belly Of Pork Recipe

| Pork belly | 1 Pound | |
| Rind of 1 lemon | ||
| Egg | 1 | |
| Breadcrumbs | 4 Ounce, crisped | |
| 1 tab. dry mustard | ||
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Get the butcher to remove rib bones and slice the meat into slices about 1/2 in. thick.
Beat the egg ready for dipping.
Mix breadcrumbs, grated lemon rind and mustard.
Dip each pork slice into beaten egg, coat with seasoned breadcrumb mixture, and put the slices into a greased shallow fireproof dish.
