Potato Skins Recipe
Ingredients
6 large Idaho potatoes, baked
Black pepper
4 ounces natural butter substitute, such as Molly McButter or Butter-Buds, mixed with 1/4 cup hot tap water
Directions
1. Cut baked potatoes in half lengthwise and scoop out the inside, leaving a 1/4-inch shell. Reserve the insides of the potatoes for another use.
2. Cut each potato half in half lengthwise.
3. Coat the inside of each shell with the butter substitute mixture and sprinkle with black pepper.
4. Broil 6 inches from the heat for 5 minutes or until the skins have browned.
Variation After the potatoes have been under the broiler for 3 minutes, sprinkle the potatoes with grated nonfat cheese. Return to the broiler until the cheese melts.
