Directions

Turn electric skillet control to 350 degrees.
Season ribs; brown, covered, in skillet.
Remove ribs; pour off excess drippings, reserving 3 tablespoons in skil- let.
Add onion, green pepper, celery and garlic to drippings; simmer until transparent, stirring fre- quently.
Add rice, salt, peppers and 11/4 cups water; stir well.
Top mixture with ribs; cover.
Reduce heat to 300 degrees.
Cook for 20 minutes or until rice is tender.
Add parsley and green onion tops; cook for 5 minutes.
