Skillet Okra And Vegetables Recipe
Skillet okara and vegetables is a filling and appetizing side of okra and and vegetables like tomatoes, beans and onions cooked and served with crumbled bacon on top. I love to serve this with rice for a filling meal.
Ingredients
| Bacon Slices | 3 | |
| Onion | 1 Large, chopped | |
| 1 28-ounce can tomatoes, cut up | ||
| Okra | 2 Cup (16 tbs), sliced | |
| Butter beans | 1 16 Ounce, drained | |
| Whole kernel corn | 1 8 Ounce, drained | |
Directions
In a heavy 12 inch skillet cook the bacon till crisp.
Remove bacon; drain on paper towels.
Reserve 2 tablespoons bacon drippings in skillet.
Add onion to the skillet.
Cook, uncovered, just till onion is tender.
Add the undrained tomatoes, okra, butter beans, and corn.
Season with salt and pepper.
Simmer, uncovered, about 20 minutes or till liquid is almost evaporated.
Transfer to a serving platter.
Crumble the bacon; sprinkle atop.
