Shortening - 2 tbsp.

MAKING
1) In an electric skillet, combine the butter, 2 cups brown su gar, and 1 1/2 cups water.
2) Heat to 225 degrees.
3) Combine and sift the flour, baking powder, and salt.
4) In a bowl, combine the shortening and remaining brown sugar and cream well.
5) Beat in egg.
6) Add in the flour mix, alternating with milk.
7) Stir in the vanilla and dates.
8) Drop the batter tablespoonfuls into the hot brown sugar mix.
9) Cover the skillet.
10) Allow to cook for 25 minutes.
SERVING
11) Serve pudding warm.
12) Spoon over the hot syrup.
