Skillet Chicken Dinner Recipe

| Vegetable cooking spray | ||
| 8 chicken drumsticks, skinned | ||
| 1 pound sweet potatoes, peeled and cut into 3/4-inch slices | ||

| 1 cup unsweetened pineapple juice | ||
| 1 medium-size green pepper, cut into strips | ||
| 2 cups frozen English peas | ||
Directions
Coat a large skillet with cooking spray, place over medium heat until hot.
Brown chicken on all sides.
Add sweet potatoes and next 4 ingredients, bring to a boil.
Cover, reduce heat, and simmer 20 minutes.
Add green pepper and English peas, cover and cook 8 minutes or until crisp-tender.
Remove bay leaf.
